Total Time 30 minutes mins
- 2 Cups Shredded Cheese We use sharp, colby jack, or raw cheddar cheese.
- 3 tbsp Cold Butter
- 1 Cup All purpose flour
- 1-4 tbsp cold water
- Salt to taste
Preheat oven to 350℉
Using a food processor shred your cheese
Add cold butter to your food processor and shred as well
Dump shredded cheese and butter into a separate bowl and place your blade attachment on your food processor. Add cheese and butter back in.
Add flour to food processor and pulse until it forms a grainy texture.
Add one tablespoon of water at a time and pulse until the dough just starts to come together.
Spread flour on counter and knead dough until it comes together into a ball.
It is recommended to flatten into a disk, cover with plastic wrap, and chill in refrigerator for at least a half hour. I'm never patient enough for this though and they always seem to come out just fine.
Roll dough out on a lightly floured surface to about 1/8"-1/4".
Cut dough out using a goldfish cookie cutter or simple cut into squares using a knife. Place cut out dough onto a parchment lined cookie sheet and bake for about 20 minutes. If your dough is pretty thin try baking for 10 minutes and see how they are doing. I sometimes bake mine for as long as 25 minutes. We like them slightly brown and crunchy.
Add salt to taste and enjoy! Store them in an air tight container.
