Gluten Free Double Chocolate Mini Muffins
These delicious GF double chocolate mini muffins will be your go to snack treat guaranteed. Easy to make and even easier to consume. They might not last long... better make a double batch :).

- 2 Bananas
- 6 tbsp Melted coconut oil
- 1 tsp Pure vanilla extract
- 2 Eggs
- ¼ cup Honey
- 1½ cups Almond Flour
- ½ cup Coconut Flour
- ¼ cup Cacao Powder
- ½ tsp Baking Soda
- ¼ tsp Salt
- 1 cup Chocolate Chips
Preheat oven to 350 degrees F. Line a mini muffin pan or use silicone mini muffin pans that do not need a liner. Mash bananas in a large bowl. I like to use my hand mixer.
Add in melted coconut or avocado oil, vanilla, eggs, and honey. Mix to combine.
Add almond and coconut flours, cacao powder, baking soda, and salt. Mix to combine.
Fold in chocolate chips.
Using a small cookie scoop fill mini muffin pan with batter. You should have enough for two 24 muffin pans.
Bake at 350 degree F for about 20 minutes. In my house with my oven, 19 minutes is perfection.
