Oven Roasted sweet potatoes

This oven roasted sweet potato recipe is extremely easy, so delicious, and a perfect in season side dish to any autumn meal. It’s also a fun dish to make with your littles. For this particular meal I had my sweet mini me helping me add seasonings and mix up the potatoes.

get the kids involved

I love when I’m able to get my kids in the kitchen helping me. This is a skill I’m still working on, but when they’re in there mixing and dumping ingredients (mostly) in the right place, it truly warms my heart. Not only are they getting important life skills, but they are WAY more willing to try new foods if they’ve helped prepare it.

We have two picky eaters and one that will eat or try just about anything. I’m completely convinced that it’s in large part due to how we fed them their first couple years of life… but that’s a story for another post ;). Anytime I can get my picky eaters to try new foods I’m absolutely delighted. It brings hope to my soul that we haven’t completely screwed them up, lol! If you have picky eaters too, try having them help you prepare snacks and meals and see if they’ll try more things. I bet they will.

Ingredients

  • Sweet Potatoes
  • Avocado Oil (or oil of choice)
  • Salt
  • Pepper
  • Paprika
  • Garlic Powder
  • Italian Seasoning

Instructions

  1. Preheat oven to 425 degrees F
  2. Line a baking sheet with parchment paper
  3. Peel sweet potatoes
  4. Chop sweet potatoes into small bite size pieces and arrange on the parchment lined baking sheet (we love a lot of flavor so we like to chop pretty small pieces so each bite has all the yummy seasonings)
  5. Add avocado oil (or oil of choice) and mix so it covers all the sweet potatoes
  6. Add salt, pepper, paprika, garlic powder, and Italian seasoning to the oil covered sweet potatoes and mix well
  7. Bake for about 25 minutes or until a fork can easily pierce it and the edges are slightly browned

  • 4-5 Sweet Potatoes
  • 2 tbsp Avocado Oil or oil of choice
  • ½ tsp Salt
  • ¼ tsp Pepper
  • ½ tsp Paprika
  • ½ tsp Garlic Powder
  • 1 tsp Italian Seasoning

Instructions
 

  • Preheat oven to 425℉
  • Line a baking sheet with parchment paper
