Homemade Pico de gallo

Homemade pico de gallo can take an average taco and make it into something so unbelievably yummy. We absolutely love the freshness that this ‘salsa’ brings to any meal. We love to eat it with just some Sea Salt or Lime Siete chips too.

Traditional Pico De gallo

Traditional pico de gallo would have fresh tomatoes, onions, jalapeno peppers, cilantro, lime juice, and salt. In an ideal world I would always make pico de gallo this way, but our house does not often operate in the ideal ;). I have gotten into the practice of using what we have and I strongly encourage anyone else to do the same! It cuts down on stress, grocery costs, time, and waste.

Make it with what you have!

Thanks to my green thumb (and generous) mother and friends, I have an abundance of tomatoes and jalapenos sitting on my counter right now. We were having tacos and I needed to make some salsa… seemed like a no brainer! However, I did not have lime juice or cilantro. While I would prefer pico de gallo with lime juice and cilantro I decided to make it anyway with what we had. It was delicious!

In last nights pico de gallo I added fresh tomatoes and jalapenos with onions, lemon juice, salt and some garlic powder (because why not?). I didn’t have any limes, but I did have a whole bag of lemons that needed to be used soon. I often substitute lemons and limes in dishes and so far I’ve only been disappointed once (I used lime juice for hummus once…. and never again).

So don’t be afraid to mix it up a bit in your own kitchen. What dishes do you often make with just whatever you have on hand?

Ingredients:

Tomatoes

Jalapenos

Onion

Juice of a lime (or lemon)

Cilantro

Salt

Garlic Powder (optional)

Instructions:

  1. Chop or dice your tomatoes, onions, and jalapeños and add to a small bowl. Deseed jalapeños if you would like (we always do). My husband likes to have a little seeds in there for a little kick.
  2. Juice one lime (or lemon) and add to the bowl of chopped vegetables.
  3. Add salt to taste and if desired add garlic powder.
  4. Chop cilantro and add to bowl.
  5. Gently mix to combine and let set in refrigerator for at least 30 minutes to let the flavors meld together. Or don’t and gobble it up immediately like me! 🙂
  6. Use as a condiment, topping, or dip and enjoy :).

Homemade Pico de Gallo

This super easy homemade pico de gallo recipe is the perfect addition to tacos, quesadillas, fajitas, and so many other dishes! So yummy with just some chips too.
Prep Time 10 minutes
Chill Time To Allow Flavors to Meld 30 minutes
Total Time 40 minutes

Ingredients
  

  • 4-6 small to medium Tomatoes
  • 2-3 Jalapenos Deseeded if desired
  • 1 Medium Onion
  • 2-4 tbsp Lime juice from 1-2 fresh limes I've also used lemon juice in a pinch!
  • ½ cup Cilantro Or desired amount
  • 1 tsp Salt Or desired amount
  • ½ tsp Garlic Powder Optional

Instructions
