Simple Summer vegetables with Everything Bagel seasoning

These simple summer vegetable with everything bagel seasoning will make the perfect side dish to any meal. If you have a garden, use what’s fresh and ready! If you have a local farmers market you can go to, I’d highly recommend it! The best part of this simple summer vegetable side dish is that you can use pretty much any vegetable. What doesn’t taste good with everything bagel seasoning??? I haven’t found anything yet… but I guess it is possible.

Ingredients

Any ready to harvest vegetables growing in your garden! 😉 That’s the dream anyway. For all of the rest of us without a beautiful and bountiful garden… pick up 3-5 of your favorite vegetables from a local farmers market or store. I often use bell peppers, broccoli, green beans, and onions. Corn, tomatoes, squash, zucchini, peas, and so many other vegetables would be wonderful as well.

Everything bagel seasoning. I use a store bought brand that doesn’t seem to have any yucky stuff in it. You could easily make your own like this recipe too if you’re into that kind of thing :).

Avocado oil spray, or any cooking oil.

Instructions

  1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper
  2. Cut vegetables into bite size pieces and spread out onto lined baking sheet
  3. Generously spray vegetables with avocado oil and toss them around a little to evenly coat
  4. Sprinkle on the everything bagel seasoning to desired amount
  5. Bake for 30 to 50 minutes depending on how soft you like your vegetables
  6. Enjoy 🙂

  • 3-5 Vegetables We like to use broccoli, onion, green beans, bell peppers, squash, corn, tomatoes, etc.
  • Avocado oil spray Or cooking oil of your choice
  • 1-3 tbsp Everything Bagel seasoning
