leftover ingredient salad with Homemade Vinaigrette Dressing

It’s the end of the week and there’s a random selection of leftover ingredients from past dinners. If you’re like me, you hate throwing food away. Often I’ll take those ingredients and throw them into a salad. If I have lettuce great, but even if I don’t it’s still delicious. Toss it up with homemade vinaigrette dressing (recipe below) and voila! Not only is this easy and quick, but it also stretches your money.

Putting together leftover ingredient salad

More than likely you’ll have extra vegetables that your family enjoys because you used them to make dinners that your family likes. You may even have these vegetables already chopped up making this meal extremely easy. Sometimes I’ll chop up a little extra of my veggies through the week just to make leftover ingredient salad. I love salad, but what I love about leftover ingredient salad the most is to have a meal I can dump into a bowl and whip up in 5 minutes. We’ll have leftover ingredient salad as a dinner, or break it into a few containers and have it for some lunches.

Hopefully you’ll have some leftover meat as well. We’ve added in leftover roast, chicken breast, ham, turkey, pulled pork, steak, and more. Somehow the random seasonings on leftover meat, variety of leftover vegetables, and homemade vinaigrette dressing comes together so deliciously.

Homemade Vinaigrette Dressing

Ingredients

Instructions

Add 1/4 cup red wine vinegar and two teaspoons apple cider vinegar to a jar with a lid.

Add two tablespoons water.

Add 3/4 cup olive oil.

Add salt and pepper to taste.

Add 1-2 tablespoons Italian seasoning.

Add 1/2 teaspoon onion powder.

Add 1 teaspoon garlic powder.

Place lid on jar and shake vigorously. You’ll need to shake this dressing each time you go to use it.

Homemade Vinaigrette Dressing

This quick and easy homemade vinaigrette dressing is so delicious on pretty much any salad or even as a bread dip.
Prep Time 5 minutes

Ingredients
  

  • ¼ cup Red Wine Vinegar
  • 2 tsp Apple Cider Vinegar with the mother
  • ¾ cup Olive Oil
  • Salt to taste I like about 1 tsp
  • Pepper to taste fresh cracked pepper is best and I use about 1 tsp
  • 1-2 tbsp Italian Seasoning
  • ½ tsp Onion Powder
  • 1 tsp Garlic Powder

Instructions
 

  • Add red wine vinegar and apple cider vinegar to a jar with a lid.
  • Add Olive Oil
  • Add all seasonings (salt, pepper, Italian seasoning, onion powder, garlic powder)
  • Place lid on jar and shake vigorously. You will need to shake this dressing each time you use it.
